This Pink Bourbon is brought to us from Juan Camillo Castiblanco of the El Carmen cooperative and has undergone Camionetta Anoxic Natural processing. A bit of a mouthful? Let’s break it down for you.
The coffee is purchased as cherry, soaked to clean and remove any sticks or leaves and then decanted into open tubs. Once these tubs are full, the coffee travels by truck - or Camionetta in Spanish - around 500km to the processing station. During this time, it begins an oxidated natural fermentation process which is often known as a Reposado - a rest time before further processing. This whole process can take up to 72hrs, before the coffee reaches the processing station and undergoes a further 48hr anoxic fermentation - fermentation which is carried out in an oxygen-free environment.

This lot of the Pink Bourbon begins as the same coffee and undergoes the same process as the above. The difference here is that an additional stage - sugarcane decaffeination - is then carried out removing 99.9% of the caffeine content.
This decaffeination process combines high mountain spring water and Ethyl Acetate (EA), a compound which is already naturally present in every coffee cherry. The EA for this process is obtained from a sugarcane-based process and is, together with spring water, the only other element coffee gets in contact with. The process allows for gentle extraction of the caffeine from the bean, avoiding excessive heat or pressure, maintaining the natural structure and all characteristics of the coffee bean.
